Yield: 4 to 6 servings
This is a tasty pasta dish we found years ago
Ingredients
- 2 tbsp olive oil
- 1 tsp red chili flakes
- 1 minced onion
- 8 oz spicy Italian sausage, cooked and sliced into ¼ inch thick rounds
- Salt and pepper
- 1 cups white beans
- 2 cups chicken broth (add slowly and watch if too much)
- 8 oz Cavatappi pasta
- 2 tbsp butter
- 1 cup arugula
- 1/2 cup grated Grana Padano or Parmesan cheese
Method
- Use a large sauté pan
- Add oil to pan, red pepper flakes, onion and cook
- When onion is almost done add cooked sausage and season with salt and pepper
- Add in beans and broth. Bring to a boil and reduce by half
- Cook Cavatappi pasta a la dente
- Add the 2 tbsp butter to the pan and melt
- Add pasta to pan and mix thoroughly until the pasta develops a glaze in which the sauce adheres
- Check salt and pepper and add more liquid if necessary
- Mix in the arugula at the last minute
- Mix half the grated cheese into the pan with the pasta. Serve the remainder as garnish
- Serve immediately
